Hummingbird Nectar Recipe: The Complete Guide

Hummingbird nectar is not a recipe you buy — it is a recipe you keep in your head. Four ingredients, one ratio, five minutes at the stove. Yet almost every backyard birder we know has, at some point, been told a version of the recipe that is wrong: too sweet, dyed red, made with honey, or “topped off” for weeks. The bird pays for those mistakes.

This guide gives you the exact recipe recommended by the National Audubon Society and the Cornell Lab of Ornithology, the reason each rule exists, and the small changes that turn a feeder from a chore into something the birds actually visit. If you have exactly five minutes, skip to the recipe. If you have twenty, read the rest — the mistakes section alone will save you from the two problems that cause most feeder abandonment.

The only recipe you need: 1 part sugar, 4 parts water

That is it. One part plain white sugar to four parts water, dissolved. No red dye. No honey. No brown sugar. No “organic raw” cane sugar with molasses left in. No preservatives.

The ratio matches the average sucrose concentration of the wild flowers hummingbirds feed on — roughly 20% sugar by weight. Get it much sweeter and you risk dehydrating the bird; get it much weaker and they will stop coming. Four to one is the sweet spot the science and the birds agree on.

The most common measurements:

  • 1 cup water + 1/4 cup sugar — right for a small window feeder
  • 2 cups water + 1/2 cup sugar — a full standard feeder
  • 4 cups water + 1 cup sugar — enough for two feeders or a big-tank hummer party in peak summer

Any measuring unit works as long as the ratio holds. Grams: 25 g sugar per 100 g water. Milliliters: 60 ml sugar per 240 ml water. Do not eyeball it — hummingbirds notice.

Step by step: how to make hummingbird nectar

The process is deliberately simple. Every step is here to solve one specific problem — we call those out as we go.

1. Measure

Use plain white granulated sugar and clean tap water. Measure both. Precision matters at this ratio: a heavy pour of sugar can push the mix to 6:1 or 5:1 sweetness, which the birds will drink and which then dehydrates them faster than they can compensate.

2. Heat the water (optional, but useful)

Bring the water to a light boil, then take it off the heat. You are not sterilizing the nectar — the sugar solution is not stable long enough for that to matter. You are doing two things: (1) driving off some of the chlorine and dissolved minerals from tap water that can speed spoilage, and (2) making the sugar dissolve faster and more completely.

Do not boil the water with the sugar already in it. Prolonged heat can caramelize the sugar into compounds hummingbirds find harder to digest, and there is no benefit — the sugar dissolves fine in hot-off-the-boil water.

3. Dissolve the sugar

Add the sugar to the hot water and stir until completely clear. If you see any crystals at the bottom of the pot after a minute of stirring, keep going. Undissolved sugar left in the feeder can clog the ports and grow mold at the bottom.

4. Cool to room temperature

Let the nectar cool on the counter before filling the feeder. Hot nectar can warp plastic feeders and can kill any bird that arrives before the temperature drops. This takes about 30 minutes. Do not rush it in the fridge unless you are pouring the nectar into a glass container first — hot liquid into a cold plastic container is another way to warp a feeder.

5. Fill and refrigerate the rest

Fill the feeder to the recommended line (usually 75–80% full — do not top the reservoir or it will drip). Pour any extra nectar into a clean glass jar with a tight lid and refrigerate. It will keep for up to two weeks in the fridge; we cover storage in more detail below.

Which sugar to use — and what to never use

Use: Plain white granulated cane sugar. That is the only correct answer.

Never use:

  • Honey. Honey ferments faster than sucrose at feeder temperatures and provides a better growth medium for yeasts and molds. It is the swap most consistently warned against by the National Audubon Society and long-time backyard-birding groups, and we follow their guidance: plain white sugar only.
  • Brown sugar, turbinado, “raw” cane sugar, sucanat, or any unrefined sugar. These retain molasses, which carries iron and other minerals white sugar does not. Whether chronic exposure at feeder levels causes real harm is not fully settled in the literature, but the mainstream birding recommendation is to stay with refined white sugar as a precaution, and we agree with that recommendation.
  • Powdered / confectioners’ sugar. Contains cornstarch as an anti-caking agent, which will ferment in the feeder.
  • Artificial sweeteners (aspartame, sucralose, stevia). These have no calories, which is the entire point of the nectar. Hummingbirds have among the highest energy demands of any vertebrate for their size — calorie-free sweeteners are a starvation trap dressed as food.
  • “Organic” sugar with visible molasses. Same problem as brown sugar — iron content too high.
  • Agave, maple syrup, corn syrup, fruit juice. All contain compounds unsuited to a hummingbird’s digestion.

The one exception to “white cane sugar only” is beet sugar, which is the same sucrose molecule and is safe. Most white sugar on US shelves is a mix of both; either is fine.

Red dye: don’t

Almost every commercial nectar concentrate you can buy at a big-box store contains red food coloring, usually Red 40. Do not use those, and do not add red food coloring to homemade nectar. The dye is not a nutrient and offers no benefit to the bird. Long-term health effects of feeder-level dye exposure on hummingbirds have not been definitively studied, which is precisely the reason to skip it: there is no upside, and the downside — if it exists — is not one you would be able to see in the yard.

The reason those products are red is marketing. Hummingbirds are attracted to the color red — but they are attracted to red on the feeder, not in the nectar. Every well-designed feeder already has red plastic or glass on the parts that need to be red. The nectar inside should be clear.

If you already own dye-based nectar, do not toss it into the yard where anything will drink it. Empty it into the trash and rinse the bottle.

How to store nectar

Any nectar you did not put into the feeder goes into a clean glass jar in the fridge. Do not use plastic if you can avoid it — plastic picks up flavors and is harder to scrub biofilm off later.

Storage timeline:

  • In the fridge, sealed jar: up to two weeks. Beyond that the sugar starts to ferment even at cold temperatures, and you will smell it before you see it. When in doubt, dump and remake — it costs about ten cents.
  • On the counter: do not store. Room-temperature sugar water grows yeast in less than 24 hours.
  • Freezing: possible but pointless. Nectar takes five minutes to make from scratch; freezer space is more valuable.

Rinse and re-use the same jar. A wide-mouth pint jar is the right size for one full feeder’s worth of refill nectar.

When to change the nectar in the feeder

This is the single question we get most from readers, and the answer depends on temperature. Sugar water ferments and grows mold faster in heat.

Signs it is past due, regardless of what the chart says: the nectar looks cloudy, you can see black specks or floating strands, or the feeder smells sour when you open it. Any one of those and it goes down the drain now. In hot weather, checking the feeder becomes a morning-coffee habit.

Every time you refill, do a two-minute rinse of the reservoir and feeding ports with hot water and a bottle brush. Once a week, do a proper cleaning — soap or a solution of one part white vinegar to four parts water works. Do not use bleach; residue is hard to rinse from small ports and hummingbirds are tiny animals with fast metabolisms.

Common mistakes to avoid

Six mistakes cause about 90% of hummingbird-feeder problems. Fixing them fixes almost everything.

  1. Getting the ratio wrong. Eyeballing it, or using an old recipe that called for 3:1. Stick to 4:1. If you already made a stronger mix, dilute it — do not put it out.
  2. Boiling with the sugar in. Caramelizes the sugar. Heat the water first, then add sugar.
  3. Using anything other than plain white sugar. Honey and unrefined sugars are the two most dangerous swaps — see above.
  4. Adding red dye. Unnecessary and possibly harmful. Red parts on the feeder do the attracting.
  5. “Topping off” the feeder instead of replacing. New nectar on top of old carries whatever mold or fermentation was starting in the bottom. Always empty, rinse, refill.

Two more that are less common but worth naming: hanging the feeder near ant trails (they will find it), and hanging it near hawk cover (the birds will not come). Both are solvable with placement.

The winter recipe question: is 1:3 safe?

You will find sources online — some of them well meaning — telling you to bump the ratio to 1:3 (or even stronger) in the winter to give overwintering hummingbirds more calories. The claim is that they need denser food to survive cold nights.

Our position, and the one taken by most extension programs: stick with 4:1 year round. Wild flower nectar does not become sweeter in winter, and hummingbirds have lived through millions of winters without a sugar upgrade. What they actually need in winter is a feeder that does not freeze, which is a hardware problem — solve that with a heated feeder or a rotation of two feeders — not a chemistry problem.

The one situation where a slightly stronger mix (say 3.5:1) is a defensible short-term choice is a truly extreme cold snap in a region where the birds have limited alternate food and are visibly in trouble. That is a “know your local birds” call, not a rule to run all season.

FAQ

Do I have to boil the water? No. Boiling helps with dissolving and burns off some chlorine, but if you are using filtered water and hot tap water, you can skip it. What you cannot skip is measuring carefully.

Can I use warm tap water instead? For most tap water, yes — as long as the sugar fully dissolves and you skim off any mineral scum that appears. If your local water is very hard or heavily chlorinated, boil-and-cool.

How much nectar should I make at a time? Enough to fill the feeder plus one refill, and no more. It is easier to make small batches often than to store half-used jars for weeks. Two cups of water plus half a cup of sugar is a good default for a single mid-sized feeder in summer.

How long before hummingbirds find a new feeder? Anywhere from two hours to two weeks, depending on your area’s density. Once one bird finds it, others follow within days. If you have not seen anyone after three weeks, check placement — most “empty” feeder problems are about location, not the nectar.

Should I clean the feeder if I see wasps or bees? Yes, and check that your feeder has bee guards on the ports. If bees are the whole problem, a saucer-style feeder with the nectar deeper below the port surface generally solves it — bees cannot reach the liquid but the long hummingbird tongue can.

Is store-bought concentrate ever worth it? For someone who fills two or more feeders daily in peak season and is short on time, yes — as long as it is dye-free. For a single feeder it is not close: homemade is cheaper, faster, and cleaner.

What about attracting orioles with the same nectar? Orioles will drink hummingbird nectar but prefer a slightly weaker mix (about 6:1) and different port sizes. If you want both, run a dedicated oriole feeder rather than sharing.

The tools that make it easy

You do not need much. A saucepan you already own, a quarter-cup measure, a stir spoon. The three things that meaningfully change the experience are the feeder itself, a way to measure sugar quickly, and a brush that fits down the reservoir.
